Ingredients
  • 1 packet Maggi or Rameni noodles(tastemaker discarded)
  • 1 cup sliced mushrooms
  • 2 cups loosely packed baby spinach
  • ¼ cup finely chopped onions
  • 2 garlic cloves smashed and finely chopped
  • ¼ teaspoon dried oregano
  • 1 teaspoon Indian curry masala
  • 1 tablespoon all-purpose flour
  • ¾ cup skim milk
  • ¼ cup low-fat sour cream
  • 2 tablespoons grated parmesan cheese
  • ½ teaspoon fresh ground black pepper
  • salt as per taste
  • 1 tablespoon olive oil
Instructions
  1. Boil noodles according to package instructions. Save ¼ cup of cooking water to loosen sauce later, if needed. Drain noodles and toss with a teaspoon of olive oil so they don't stick. Keep it aside.
  2. Mix sour cream and parmesan cheese in a separate bowl till it forms a smooth mixture. Keep it aside.
  3. Heat medium skillet over medium heat and add a tablespoon of oil into it. Add onion and garlic and saute 3 minutes, until onion is soft.
  4. Meanwhile, finely chop the spinach. Keep it aside.
  5. Add mushrooms and saute at medium high heat until it loses its moisture and becomes soft.
  6. Add spinach and saute at medium heat for 3-4 minutes. Add oregano, curry masala and cook for 1 minute.
  7. Add flour and stir to coat the mushroom spinach mixture.
  8. Add milk and bring to a simmer. Cook until the sauce thickens, stirring frequently.
  9. Remove from heat and stir in sour cream and parmesan mixture.
  10. Add the noodles to the skillet and toss with sauce to coat.
  11. Transfer the noodles into a bowl. Season it with freshly ground pepper and salt. Serve it hot.
