The advent of the mushrooms in the culinary world  dates back to France in the 19th century, when citizens of this country began growing the fungi for consumption. The brown crimini mushroom was the standard around the world until tastes became more exotic and people embraced shitakes, morels and other more “gourmet” mushrooms. Consequently, the earthy flavor of mushrooms became so popular that it began to be embedded in a large variety of dishes and today,  every year , 4th of February in the United States of America is celebrated as National Mushroom Day.

Four Cheese Spinach Stuffed Mushrooms are traditionally considered to be an Italian-American dish, stuffed with a wide variety of ingredients which include cheese, meats like chicken or crab, seafood or veggies. In this recipe, the mushrooms are stuffed with a cheesy spinach mixture and these are baked. So, it is a healthy , nutritious and delicious stuffed mushrooms delight .

Ingredients
  • 12 large mushrooms (button or crimini variety)
  • 2 teaspoon olive oil for cooking
  • cooking oil (to spray on baking sheet)
  • ½ cup finely chopped onions
  • 2 tablespoon finely grated or chopped garlic
  • 2 cup tightly packed baby spinach leaves roughly chopped
  • ½ teaspoon white pepper powder
  • ¼ teaspoon parsley
  • ½ teaspoon basil
  • ½ teaspoon ground black pepper
  • ¼ teaspoon salt
  • ½ teaspoon garlic powder
  • 2 teaspoon grated parmesan (reduced fat) at room temperature
  • ½ cup fresh mascarpone at room temperature
  • ¼ cup cream cheese (reduced fat or fat free) at room temperature
  • 2 tablespoon shredded mozzarella (part-skimmed) at room temperature
Instructions
  1. To prepare Four Cheese and Spinach Stuffed Mushrooms, preheat Oven to 375 degrees Fahrenheit.Grease a Baking sheet with cooking oil spray. Keep it aside.
  2. Gently remove the stems of the mushrooms.Keep the caps and the stems separately aside.
  3. Wash and clean the caps. Pat it dry with kitchen paper towel.Arrange it on the greased baking sheet, rounded side down.Bake in the preheated oven for 12-14 minutes.
  4. Finely chop the mushrooms stems.Heat a pan and add 2 teaspoon oil into it.When the oil is hot, add the onions, chopped stems and garlic.Stir fry on medium high heat till the onions and the mushrooms become soft. Mushrooms contain moisture; hence they are cooked at medium high heat to lose the water content.
  5. Add the spinach leaves and the white pepper powder into the pan.Mix and stir fry until the spinach leaves are wilted. Turn off the heat. Allow the mixture to cool for 3-4 minutes.
  6. In a separate bowl, combine mascarpone cheese, cream cheese, mozzarella cheese, parsley, basil, black pepper, and salt.Whisk by hand till it forms a smooth creamy mixture.Add in the vegetable mixture. Stir and mix well.
  7. In another separate bowl, mix the parmesan cheese with garlic powder. Keep it aside.
  8. Take out the baked mushrooms and allow it to cool. Keep the oven preheated for cooking later.
  9. Remove any water or moisture inside and outside the mushroom caps using kitchen paper towel. The mushrooms caps should be absolutely dry.
  10. Fill the mushroom caps with generous amount of cheese-veggie mixture such that they are piled even on top of the mushroom caps. Sprinkle the parmesan garlic mixture over the stuffed mushroom caps.
  11. Arrange these creamy cheese spinach stuffed mushrooms on a greased baking sheet and bake in the preheated oven for 8-10 minutes until the topping begins to brown.
  12. Take it out and allow them to cool slightly.
  13. Serve these delectable creamy Four Cheese and Spinach Stuffed Mushrooms warm immediately.
