Mascarpone is an Italian cream cheese, milky white in colour and easy to spread. It is a thick,double or triple cream, soft cheese with a very fat content. In the series #MagicOfMangoes, I bring to you ‘Mascarpone with Mango and Mint in crispy wonton wrappers’. This is a light, creamy , sweet and cheesy bundle of deliciousness that is easy, uncomplicated and looks gorgeous, a perfect dessert to impress guests both in looks and flavor !!

Ingredients
  • ½ cup Mango Puree
  • ⅔ cup mascarpone cheese
  • ¼ cup sugar
  • 6 wonton wrappers (thawed at room temperature of frozen)
  • ½ tsp ground cinnamon powder
  • ¼ tsp orange or lemon zest
  • 2 tsp cooking oil
  • For Garnishing:
  • 1 tbsp Chocolate sauce
  • 1 tsp Chopped almonds or walnuts
  • 6 fresh small mint leaf
Instructions
  1. Preheat oven to 200 C . Lightly grease a mini muffins baking tin with cooking spray. Brush the wonton wrappers with oil and insert it into each muffin tin. Gently press the wonton wrapper into the tin so as to form a small tart . The edges may overlap each other and stick out of the cup.
  2. Sprinkle with salt and bake for 8-10 minutes in the oven. Cool the wonton wrappers cups in the muffin tin placed on a wire rack for 5-10 minutes.
  3. Add mango puree, mascarpone cheese, sugar in an electric mixer and beat at low pulse till it is smooth and creamy. Add cinnamon powder and orange zest. Stir and mix.
  4. Fill the wonton wrapper cups with generous amount of mango puree mixture. You may garnish it with chocolate sauce , chopped walnuts or almonds and mint leaf. Mint leaf add a nice aroma and flavour to the dish.
  5. Serve it immediately or refrigerate it till the cups are ready to be served.
