The creation of tricolour foods to signify their country’s flags and celebrate their nationality, is credited to the Italian immigrants, who arrived in America in the late 19th and early 20th centuries. Since at the time, good quality olive oil and arborio rice were not easily available in America, except cheese and meat, therefore the Italian immigrants pioneered a culture of “abbondanza” .

According to this culture, “Abbodanza”, the Italian chefs started innovating their traditional recipes and created new delicious dishes from them. Consequently, this gave a rise to a new hearty, delicious Italian Cuisine, which actually does not exists in the land, that inspired it !! Amazing, right ? So, in conclusion, rainbow cookies also known as Tricolor Cookies or Seven Layer Cakes was a result of this culinary innovative culture. They were invented in New York by Italian immigrants who designed them to invoke the flag of their motherland.
