Turmeric Chilly Marinated Salmon Steak(Amritsari Fish)

Turmeric Chilly Marinated Salmon Steak(Amritsari Fish) is a popular street food, from Amritsar,in the state of Punjab, India. This dish is prepared with a lot of spices and  is one of the restaurant style, starter fried fish. Traditionally, Amritsari Fish is shallow fried in tawa or pan but you can also bake it in oven as in this recipe. This healthy, traditional, nourishing fish fry is easy to cook with and makes food taste delicious.

Ingredients
  • Salmon steak (0.50 lb total ) 4nos
  • 1 tbsp ginger-garlic paste (4 garlic cloves and 1 inch ginger)
  • 1 tsp kasmiri mirch powder(or paprika powder or degi mirch, for color)
  • 1 tsp turmeric powder
  • ½ tsp cayenne pepper (or any spicy red chilly powder, you can reduce it to ¼ tsp if you like it less spicy)
  • ½ tsp white chilly powder
  • 1 tsp lemon juice
  • 3 tsp mustard oil( or use 1 tsp sesame oil + 2 tsp olive oil)
  • 3 tsp chickpea flour(besan or gram flour)
  • 1 tsp salt (or adjust as per your taste)
  • Rosemary leaves for garnishing( fresh or dried)
Instructions
  1. Preheat oven to 400 degrees F.
  2. Wash the fish pieces with cold water. Pat it dry with a kitchen paper towel. Make light gashes on the fish with a knife.
  3. Dry roast the chickpea flour till its light brown.
  4. Mix the ginger-garlic paste, salt, roasted chickpea flour, turmeric, kasmiri mirch powder, cayenne, white chilly powder, lemon juice and mustard oil in a small bowl to make a thick paste. Apply this to the salmon.
  5. Chop some rosemary leaves and sprinkle it on the salmon pieces. (I usually allow salmon to rest for 20 minutes after marinading it.)
  6. Bake the fish in the preheated oven for 18 mins and then let it rest for 10 minutes before serving it.
  7. You can also bake the fish in a pan. Heat a pan and add 4 tbsp refined oil. Sear the fish on a high flame and then on a low heat , gently cook the fish till it is done . Let it rest for 10 minutes before serving.
  8. Serve the Turmeric Chilly Marinated Salmon Steak( Amritsari Fish) hot with spicy green chutney.
