Umali Recipe – Arabic Bread Pudding made from croissants, milk and nuts, is an adaptation of the traditional Arabian sweet. Umali is a healthy and rich dessert containing phyllo dough or puff pastry, milk and nuts.

Unlike the American bread pudding that uses the stale bread soaked in sweet liquid, the Umali  uses freshly baked puff pastry for an extra level of deliciousness.Here I have used store bought puffed mini croissants. If you want, you can make your own puff pastry , cut it into pieces and use them. 

Here in this recipe, the milk is boiled and thickened to a consistency that cooks to the right creamy texture. The sweet condensed milk adds to the richness and makes it flavorful.  Suitable for all occasions and less effort to make, this dessert is ludicrously delicious and irresistible. The only preparation you need to do is to reduce the milk into almost half on low or medium high heat. Keep stirring the milk while reducing to prevent the milk from sticking to the bottom.

Take about 10-11 puffed mini croissants .Using a knife, cut the puffed mini croissants into rounds. 

Put them into a 9 X 13 baking dish. Keep it aside. Add chopped nuts and raisins over them. 

Once the milk is reduced, add the sweet condensed milk into it. 

Stir and mix until it forms a uniform rich, creamy mixture. 

Pour the milk mixture evenly over the croissant pieces so that the croissants gets soaked.

Bake in the preheated oven for 30-40 minutes until golden brown. Umali Recipe - Arabic Bread Pudding made from croissants

Serve it warm. You can also refrigerate it and serve it cold too !!

Ingredients
  • 2 litres milk reduced to half( whole or 2% milk)
  • 1 can (14 oz) fat free sweet condensed milk
  • 10-11 butter puffed mini croissants
  • ½ cup mixed nuts ( I used chopped walnuts)
  • 1 tablespoon raisins or apricots ( I used golden raisins)
Instructions
  1. Preheat the oven to 175 C/350 F.
  2. Using a knife, cut the puffed mini croissants into rounds. Put them into a 9 X 13 baking dish. Keep it aside.
  3. Sprinkle the nuts and raisins on top.
  4. Once the milk is reduced, add the sweet condensed milk into it. Stir and mix until it forms a uniform rich, creamy mixture.
  5. Pour the milk mixture evenly over the croissant pieces so that the croissants gets soaked.
  6. Bake in the preheated oven for 30-40 minutes until golden brown.
  7. Serve it warm. You can also refrigerate it and serve it cold too !!
